Method
This rich and comforting dish brings out deep umami flavours with simple ingredients, making it a must-try mushroom masala recipe for home cooks.
Step-1: Rinse the sun-dried oyster mushrooms under cold water to remove debris. Once cleaned, place them in a bowl. Add boiling water and let the mushrooms soak for 15–20 minutes to bloom.
Step-2: Heat 2 tbsp of oil and fry chopped garlic until it starts to brown. Add the mushrooms, salt them, and fry until they’re tender.
Step-3: Dice the tomatoes and blend them in a mixie to make a tomato puree. Add the tomato mixture to your mushroom mix and let it cook for 10 minutes on a medium flame.
Step-4: Once the raw smell of the tomato puree has vanished and it’s turned a deeper colour, add your spices to the mix.
Step-5: Add the fried mushrooms to the wok and keep stirring until the soy sauce is absorbed evenly.
Final Step: Add cream as required, depending on how spicy and rich you want the dish to be.
